Yesterday Evening I cooked Brenna a bunch of veggies from the farm. I cooked fried eggplant. Not deep fried but lightly batter. It was excellent and had the consistency of potato but with a better taste. I batter them in whipped Egg, milk and dipped in flour. I also threw a few leafs of basil in the mix. It did not take very long to cook. I think we will add this to our list of favorites. Eggplant is very versatile.
